Christophe Michalak (a very famous French Chef) decided to leave the Plaza Athénée to devote himself to his parisian pastry shop. No more Michalak’s famous tea times to the sound of the harpist of the Plaza’s Gallery.
We kind of saw it coming, Christophe Michalak, who handles the dessert menu of the Palace of the Avenue Montaigne since 2001, doesn’t have enough time to devote to the Plaza Athénée. With the opening of his pastry shop (on the Rive Gauche), his masterclass at Rue du Faubourg Poissonnière, his cookbooks and his participation in cook shows (Dans la Peau d'un chef sur France 2), the 42 year old Parisian Chef lives in the fast lane.
The Plaza Athénée owes him its famous Religieuse au caramel au beurre salé and its goûter à la française, launched for its re-opening back in 2014, the palace should bounce back very quickly, with the arrival of a new Pastry Chef, Angelo Musa, World Champion of Pastry in 2003, and named France’s best woker in 2007. The pastry cook, who was Philippe Conticini’s personal adviser during the opening of the Pâtisserie des Rêves , already proved his worth at the Relais Desserts Oberweis (Luxembourg), before joining the Palais du Chocolat of Pascal Caffet in Troyes (Eastern France) and the Pâtisserie Bourguignon in Metz.
The handover of power will be made during spring, to give Chef Angelo Musa enough time to take a safe start and create a new pastry menu in compliance with the establishment’s identity. In Paris, we don’t really know the cooking style of the 45 year old pastry cook, but we can’t wait to discover his new tea-time !
