Shangri-La Hotel Pastry Chef Michaël Bartocetti pulls out his new Afternoon Tea service for spring and summer, still 100% vegan! Without eggs or milk, the pastries and treats aren’t any less delicious, quite the opposite! This is one tea service that’s not to be missed.

After the success of their 100% Green dinners, launched in summer 2015, the team at the Shangri La Hotel Paris has decided to continue its 100% vegan delights for the spring-summer season. Chef Michaël Bartocetti is back to the ovens with a new summer menu that features both desserts à la carte and an incredible Afternoon Tea service.

Always aiming to follow the seasons, the Shangri-La team wanted to design a gourmet and creative menu, while leaving out the animal proteins and fats that are in most of these conventional recipes. What they came up with was a 100% vegan afternoon tea assortment. Without the eggs and dairy products, all of the recipes are recreated, flavors and textures are experimented with, andt the result is decadently delicious!

Pastry chef Bartocetti reworks classic recipes in the most natural way possible in order to not spoil the end product. He uses vegetable proteins that he sweetens with coconut sugar, maple syrup or panela unrefined sugar, creating more authentic flavors.

You can choose between about a dozen of these pastries, that are all light, simple and sophisticated. Find traditional tarts and shortbreads next to scones and shortbreads, with a sort of Fig Newton® revisited. Be sure give the vegan Chantilly cream a try (it will blow you away) as well as their mouth-watering scones

Since there’s no afternoon tea service without tea, (even if you can also deviate from the menu and opt for the cappuccino) know that the Shangri-La offers an exceptional selection that will please even the most particular customers. Choose between:

  • Genmaicha (Japanese Green Tea): Light yellow-colored and original, this tea has a sweet and pleasant flavor, combining the fresh herb taste of green tea with the nutty flavor of puffed rice.
  • Silver Tips (white tea): Rare and delicate, slightly fruity with notes of flowers and fresh herbs. This tea has a beautiful finish with notes of flowers and honey.
  • Grand Cru Ran Watte (Black Tea Sri Lanka high altitude, gardens from the Nuwara Eliya region at 2000m)

Don’t forget the mini-cakes: caramelized pecan with a touch of salt, pistachio, apricot, etc. Treat yourself to these delicious bite-sized wonders!

Of course, with tea time comes some savoury treats as well, and this assortment includes finger sandwiches with Thai flavors!

The afternoon tea service costs 45€ per person, or 80€ for two, to enjoy this delicious and guilt-free afternoon meal in a prestigious setting. If you’re not feeling up to such a hearty meal (this tea service is even more copious than their last) you can still enjoy à la carte pastries by the chef.
