Your preconceptions about plant-based diet makes you miss out on definitely delicious dishes. Not nourishing, not tasty? Hell no! To prove you it’s the other way around, we went to try this new address open in September 2018 in Paris 3rd arrondissement: Burger Theory!
Burger Theory is one of the rare plant-based fast-foods in the French capital and it’s not only devoted to a vegan public. So, take the plunge and discover the delicious burgers!
Behind the stove, we have Tom and Julia who designed a whole range of vegan burgers cooked with homemade produces: from seitan to deep-fried soy without forgetting vegan cheese, mayonnaise, ketchup and French fries. As for the burger buns, they’re specially made by a Parisian baker.
On the menu, 5 mouthwatering burgers. For instance, the King Kong (Seitan, rosemary-smoked mayonnaise, candied onions, red cabbage, sautéed mushrooms), the Casto Nola (deep-fried soy, Cajun spice mayonnaise, vegan cheese, onions, pickles, candied bell peppers) or the Giant Anky (deep-fried soy, double serving of homemade ketchup and rosemary-smoked mayonnaise, candied onions, pickles, salad, sun-dried tomatoes).
For those who test vegan burgers for the first time, Julia advises you to go for a recipe including deep-dried soy serving as faux meat (closer to it in terms of texture). We went for the burger of the moment, the Moutain Marmotte including fried soy, peanuts-BBQ sauce, pickled onions, salad, rösti and fake mountain cheese.
But we wanted to take the experience even further with the Sitting Bull including seitan, peanuts-BBQ sauce, fake cheese, onions, cilantro, carrots and corn.
Seitan indeed has a less conventional texture than fried soy, a little bit more chewy but well-seasoned as it is at Burger Theory, it was a big YES for us. By the way, we particularly enjoyed the presence of many vegetables bringing some crunch or softness to the burgers and the different sauces, just perfect to spice things up.
A big thumb up to the homemade French fries and the soup of the moment (carrot, winter squash, sweet potatoes) with the right amount of spices.
At Burger Theory, desserts are obviously homemade and vegan, as for the rest of the menu. Go for the carrot cake, very soft, or the flan chti, a sort of British pudding based on bread leftovers, very good.
You get it now, Burger Theory brilliantly breaks the prejudices about plant-based diet. As a victim of its success, the restaurant now opens its doors two evenings a week in addition to lunchtime. A well-deserved success!
