Burger Theory, tasty vegan burgers

Forget everything you think you know about plant-based food, because at Burger Theory, the burgers are full of flavor as well as being entirely homemade.

Your preconceived ideas about veganism make you miss out on some truly gourmet dishes. Not nourishing, not very tasty? Not at all! To prove you wrong, we went to try out a new address, opened in September 2018 in the 3rd arrondissement of Paris: Burger Theory!

Burger Theory is one of the few vegan fast-food restaurants in the capital, and it's not just for vegans. So take the plunge and discover their tasty burgers!

Behind the stoves are Tom and Julia, who have come up with a string of vegan burgers made withhomemade ingredients: from seitan to breaded soy, vegan cheese, mayonnaise, ketchup and fries. As for the burger buns, they are specially made by a Parisian baker.

There are 5 tempting burgers on the menu. For example, there's the King Kong (seitan steak, rosemary-smoked mayonnaise, onion confit, red cabbage, pan-fried mushrooms), the Castor Nola (soy breadcrumbs, Cajun-spiced mayonnaise, faux-mage, onions, pickles, candied peppers) or the Giant Anky (soy breadcrumbs, homemade double ketchup sauce and rosemary-smoked mayonnaise, onion confit, pickles, salad, sun-dried tomatoes).

For those trying vegan burgers for the first time, Julia recommends a recipe with soy breading as faux meat (closer, texture-wise). So we went for the burger of the moment, the Mountain Marmot, featuring soy breading, peanuts-BBQ sauce, pickled onions, lettuce, rösti and faux-mage montagnard.

But we wanted to take the experience a step further with the Sitting Bull, composed of seitan pavé, peanuts-BBQ sauce, faux-mage, onions, cilantro, carrots and corn.

The seitan pavé does indeed have a less conventional texture than breaded soy, a little chewier, but well seasoned as it is at Burger Theory, it was a big YES on our part. We also particularly appreciated the presence of numerous vegetables, both crunchy and melt-in-your-mouth, and the various sauces, which were just the thing to spice things up.

A big thumbs up also to the home fries and the soup of the moment (carrot, pumpkin, sweet potato), spiced just right.

At Burger Theory, desserts are of course homemade and vegan, like everything else on the menu. Let yourself be tempted by the soft carrot cake, or by the flan chti, a kind of British pudding made from leftover bread; very good.

As you'll have gathered, Burger Theory does a brilliant job of breaking down preconceptions aboutplant-based food. A victim of its own success, the restaurant is now open two evenings a week, in addition to lunchtime. A well-deserved success!
