For the Holidays 2022, patissier-baker Benoit Castel plays the originality card again... but returns to the very essence of his art, baking, with the creation of a never-before-seen yule log based on old wheats, looking like his famous signature shortbread.
This original yule log is based on ancient wheats cake that Benoit Castel especially loves working with for breads and pastries, creamy Madagascan vanilla caramel with Guérande sea salt; the whole being encased in biscuit-like smooth and light cream.
At the end of the day, you will get a delicate, smooth and light yule log likely to delight the most demanding taste buds. This 2022 yule log, available in limited edition, is available in the three Benoit Castel stores in Paris, as well as at the counter of the baker's latest delicatessen on December 3 & 4, and December 10 & 11, then non-stop from December 17 to 24, 2022. Allow €50 for the creation serving 6 to 8 people.
Note 3 indulging yule logs (€45 serving 6 to 8 people), already major at Benoit Castel's, are planned too: chocolate yule log with flavors of bitter dark chocolate and Sancho pepper, buckwheat praline cream and orange marmelade; praline yule log with roasted chopped almonds, milk chocolate and hazelnuts; and coconut yule log, roasted pineapple compote and avocado-passion crémeux.
