Easter 2024: l'Oeuf Poussin, a collection of paradox chocolates from Pierre Hermé

Which came first, the egg or the hen? Plunge into the heart of this paradox with Pierre Hermé's new Easter collection and discover astonishing chocolate creations this spring.

After last year's pre-Columbian civilizations, Pierre Hermé invites us to question paradoxes, and in particular the origin of the egg and the hen, which has never ceased to raise questions. For his Easter 2024 collection, available from March 7 to May 8, 2024, the French pastry chef and chocolatier has defied logic by proposing improbable and unexpected works. From the Œuf Poussin to the Œuf Pincé, via the Œuf Ligoté, he plays with the structure of the chocolate egg shell, offering surprising textures and evoking an apparent fragility.

Then there's the surprising Oeuf Kintsugi, a Pure Origin Belize dark chocolate egg, broken and then repaired using this ancestral Japanese technique, and adorned with gilding. At a good 30 centimetres tall and weighing close to 3 kilos, this exceptional egg filled with hazelnut praline is available to order only, at a price of 250 euros.

But let's take a closer look at the egg and the hen, a paradox to which Pierre Hermé seems to have found the answer in his collection, offering two eggs in which the elements are nested within each other. The hen can be perched on her egg, or a bit of both! We were able to taste the roundChick Egg, with its little protuberance representing the chick's beak, and its two chocolate eyes, simply adorable.

But its cute, oblong appearance wasn't enough to spare it, because we ate it! Also available in a milk chocolate version, the egg was blond Dulcey chocolate, made from caramelized white chocolate. Particularly sweet, it awakens the taste buds and offers a strong caramel taste, ideal for children, but in small quantities! 150 grams of pure indulgence, priced at 35 euros.

Even traditional fillings become deformed fragments of chocolate (€12), imperfect, telling of the beauty of flaws, surprising if you know how to sublimate them. Other visually impressive creations include theŒuf Dévoilé (43€), which hints at life beneath the shell, theŒuf Ligoté (65€), deformed by a chocolate rope that hides hazelnut praline, and theŒuf Pincé (29€), on which you can see the wave left by a finger stretching the shell!

If you're more into entremets (74€), Pierre Hermé has imagined a new paradox in flavor, between sweet and savory. The bitterness of buckwheat, the crunch of praline and the intensity of Hacienda Eleonor Pure Origin Ecuador chocolate mingle with dehydrated soy sauce and khorasan powder, for a surprising journey that will delight the palates of the curious. As for macaroons (€2.80), the pastry chef offers three disconcerting proposals: Licorice and Saffron, Pure Origin Belize Chocolate and Nori Seaweed or Black Garlic and Balsamic Vinegar!

For a different kind of Easter, this year's collection invites you to rise above preconceptions and leave room for discovery, for unusual flavors, from March 7 to May 8, 2024.
