Among the new bakeries that delight the capital, we are going to discover Bara, the store opened by Timothy Breton. You may not know it, but his breads already adorn more than 200 Parisian tables.
Timothy Breton, who we know through his gourmet creations at Bo & Mie, has what it takes to make you spend some good gourmet moments. He already had the ambition to open his own store. Today, the ambition is to turn the gourmet spot to then embark on a new bakery more spacious and busy, in which the pastry chef could offer, why not, desserts on a plate.
To start, know that Bara means bread in Breton, indeed, Breton people are of Breton origin, obviously. This bakery, which seems small at first sight, extends in length and lets appear the laboratory at the back of the business. The viennoiseries open to the eye on the window overlooking the pedestrian street.
We then discover a rather short section of pastries. Here, the offer is reduced to propose you fresh pastries all day long. Only 5 pastries are proposed and made in front of you each day. Chocolate eclairs, lemon pie and Paris-Brest are among the delights offered during our visit. The spearhead of the place, recycling and avoiding waste. Note that the flours are from Ile-de-France and come from the Moulins Familiaux.
We discovered 3 breads, the famous country bread, the wheat bread - buckwheat and rye, the corn bread - sunflower seeds and Espelette pepper and the version brioche very soft with corn and Espelette pepper that we loved.
On the pastry side, we surfed on the trends with smaller rolls, but less expensive and well filled, generous cruffins, praline breads and an apple turnover just divine. With its compote of 3 kinds of apples cooked for 3 hours in the oven and accompanied by raw apples before cooking, this turnover is a treat. A little more compote and we would be in heaven.
We also have a nice selection of travel cakes composed of various cakes, madeleines and other chocolate brownies. A savory offer also opens to you with, in particular, a quiche and flaky hot-dogs.
The Paris-Brest is generous and very tasty. We also like the nice acidity of the lemon pie meringuée.
As for prices, count on 1.10 € for a croissant and between 1.30 and 2.60 € for pastries. The éclair is 4 € and 6 € for the Paris-Brest. The bakery-pastry shop is open every day except Sunday, from 7 am to 7 pm and closes earlier on Saturday at 5 pm.
