Baiman's Cake is the latest brainchild of Amelle, a mother of 5 with a passion for patisserie who dreamed of opening a friendly place where people could come to enjoy themselves and learn how to bake. Derived from the first names of all the members of her family, Baiman's is a place where, as you'd expect, you'll be welcomed as if at home.
After a retraining and a pastry CAP in her pocket, she set her sights on 71 rue Robespierre in Montreuil, a former coworking space with beautiful volumes. The place is huge, with high ceilings and plenty of tables, so there's no shortage of room to sit back and enjoy a delicious meal all day long, from morning till 8pm.
Here, you'll discover handcrafted pastries, carefully prepared in a warm atmosphere. In the tearoom, you can enjoy these sweet treats accompanied by refined teas or carefully selected coffees. You can also enjoy lunch or a quick bite to eat, with a range of savoury dishes from homemade sandwiches to gourmet wraps and bagels.
The originality of Baiman's Cake also lies in its interactive side. The establishment offers patisserie workshops open to all, where you can learn how to use a pastry bag, make the perfect icing, make an entremets worthy of a professional, or even learn how to make viennoiseries that have nothing to be ashamed of in front of those from your bakery. It's a great way for sweet-lovers to get their hands dirty.
Curious and ambitious, we set off to discover a viennoiserie workshop called " Du beurre au cœur " with Anthony Nguyen, a talented tourier who delights us with his creations at Baiman's, but also at Roulés Boulés and soon at Christophe Louie. We rolled up our sleeves and set off for a full-day workshop from 9am to 5:30pm.
This ultra-complete package includes a gourmet breakfast consisting of 3 pastries, a fruity homemade granola, a hot drink, a boiled egg, cheese and fruit juice. After this gentle start and a short presentation tour, we move on to discover an ultra-spacious, well-equipped workshop.
Making croissant dough and inverted puffpastry, from kneading to shaping, the steps follow one after the other, and the hours fly by. We go on to make croissants rolled with love, pains au chocolat, followed by a demonstration of sorted Swiss bread.
Then it's time for a lighter lunch, to counterbalance that love of butter.
After lunch, a creative dessertworkshop. Then it's on to the galette decoration workshop. Once the pastries have risen, we move on to the gilding and baking.
After a warm slice of galette, we discover our chubby little babies, croissants and pains au chocolat that would be right at home on the shelves of a bakery. And of course, we leave with all our babies. For a full day with breakfast and lunch, you'll pay €349. At Baiman's, there are workshops of all kinds, as well as shorter ones to learn, for example, how to make competition flans with the king of flan: Julien Juchamalo.
