A little sea air has been blowing through the capital since the beginning of February 2018. Etienne Ryckeboer, a young entrepreneur of Norman origin and a great seafood enthusiast, has opened Bulot Bulot in the 18th arrondissement; a gourmet address that offers a great breath of iodized air in the middle of Paris!
For Etienne, Bulot Bulot is above all a place that provides " a change of scenery, in a relaxed atmosphere, by offering very affordable prices ". For a total immersion, Bulot Bulot displays the spirit of a fisherman's hut, imagined by the famous studio Forall.
And it is true that one feels particularly well in this cabin, at the same time modern and cosy, of less than 30m². Seated directly at the counter or on one of the benches, facing the bar, the trip is guaranteed.
As for the menu, Etienne Ryckeboer offers shellfish from our beautiful French coasts - and particularly from Normandy. With extremely fresh products, Bulot Bulot modifies its menu daily according to the arrival of the day, the tide and the seasons. It is therefore possible that some products are missing like the pink shrimps that evening.
So we decided to try the famous and excellent whelks, accompanied by a creamy homemade mayo!
Our neighbors opt for the award-winning natural oysters of Gouville-sur-mer. Oysters from Blainville or Cancale are also on the menu.
The suite is just as promising with a succulent tarama with truffles andsmoked eel. Tasty and melting in the mouth, these eels are a real treat for our taste buds! We highly recommend them!
Bulot Bulot also offers salmon and crab rillettes , crab cake, crab claws, grey and pink shrimps, clams, fish soup, smoked salmon or lobsters used as garnish for lobster rolls...
To accompany all this, Bulot Bulot unveils a fine selection of wines in perfect harmony with the seafood: Sauvignon, Muscadet, Chablis or even Sancerre and Riesling in White, or Côtes du Rhône and St-Emilion Grand Cru in Red.
Lovers of clever drinks are not left out thanks to a menu of five cocktails signed by Margot Lecarpentier (ex Experimental Cocktail Club), and recently at the Combat bar in Belleville.
If the"Classic Moscow Mule" (ginger cordial, sugar syrup, lime juice, ginger beer and vodka) seduces the clientele, I totally fall under the spell of the"Granville Spritz" (Saint-Germain, Sherry fino, Suze, fresh lemon juice and natural sparkling wine) which goes perfectly with whelks.
As for the beers, a craft beer from Aveyron is on tap.
And good news for those in a hurry, since Bulot Bulot also offers a part of its menu to take away!
