Shang Palace, France's only Michelin-starred Chinese restaurant, has unveiled its new menu under the leadership of its new Chef, Tony Xu. Now's the time to (re)discover the fine cuisine of this iconic Paris restaurant, located within the Shangri-La. Succeeding Samuel Lee, Chef Xu breathes new energy into this Parisian institution, combining the authenticity of Chinese cuisine with a contemporary sensibility. We set out to discover his new menu, which reflects a meticulous approach worthy of the finest Michelin-starred restaurants.
From the very first bite, Tony Xu's culinary signature is evident: fine technique, precise flavors and exceptional attention to detail, with the emphasis on vegetables. A native of Chengdu, Sichuan, the chef draws on his heritage to compose a menu that celebrates Chinese traditions, while incorporating exceptional local produce. Under his influence, the cuisine of Shang Palace retains its DNA while elevating itself through a refined mastery of seasoning and cooking.
Starters, such as the "snow" salad with sesame sauce or the steamed lobster ravioli (Long Ha Kao), feature elegant textures and harmonious flavors. A simple crunchy salad and we're transported. Foie gras with sweet and sour sauce, a daring marriage of East and West, reveals the chef's innovative spirit. At each stage, food & wine or food & tea pairings enhance the dishes: Savennières Domaine Laureau 2022 or a Pu Erh black tea from Yunnan add a beautiful match to starters.
Peking duck, the restaurant's signature dish, is beautifully presented: crispy skin and melt-in-the-mouth flesh are accompanied by chopped duck breast sautéed in a wok, served in lettuce leaves.
Steamed turbot from Brittany, flavored with ginger and coriander, illustrates the chef's commitment to marrying local products with Chinese traditions. Normandy beef fillet sautéed with pepper, meanwhile, offers a skilfully measured intensity, while seasonal vegetables, such as broccolini sautéed with smoked black bean sauce, add a vegetal note rich in character.
For dessert, mango and coconut cream, accompanied by an iced tea named "Road to Shangri-La", concludes the meal on a sweet and refreshing note.
We love the savoir-faire of Tony Xu, who delighted us with this meal. His approach, which celebrates the diversity of regional Chinese cuisines, particularly that of Sichuan, while highlighting French products, embodies a modern, respectful vision of Chinese gastronomy. The hushed setting and meticulous service complete this unique experience in the 16ᵉ arrondissement of Paris.
With menus starting at €78 at lunchtime and a tasting menu at €178 in the evening, Shang Palace continues to establish itself as one of the finest restaurants in Paris.
