From now on, going to the Musée d'Art Moderne - Palais de Tokyo will be synonymous with alove of art, but also with a desire to please your taste buds. Indeed, lovers of modern art but also lovers of gastronomy will meet at the MAM to discover one of the new tables of the museum, signed Julien Sebbag .
Named Forest in homage to the famous new-wave song 'The Forest' by the British band The Cure, this new restaurant signed Moma Group extends to the hours of the Museum of Modern Art in Paris inside, in an intimate decor where nature is displayed on the walls through projections, but also outside, on a spacious terrace, with a view of the Eiffel Tower, but above all sheltered and shaded.
"Forest is an experimental place that makes every effort to respond to a fundamental ethic: eco-responsibility. We imagine a kind of post-apocalyptic forest, in a near future, where nature tries to regain its rights. And we, in all humility, try to accompany it with products that favor recycled materials, local food and a true value of craftsmanship," explains chef Julien Sebbag, who in previous years created Créatures and Tortuga.
With Forest, Julien Sebbag proposes a raw, but also local and sharing cuisine, with Mediterranean and Oriental accents. This was already the success of Tortuga. And, as in his fish restaurant on the rooftop of Galeries Lafayette, with Forest, Julien Sebbag doesn't really offer starters and main courses, but small plates to share.
On the menu, a large place is left to the vegetal which subtly underlines the aquatic and the animal and is exposed to everyone's eyes from the open kitchen .
Julien Sebbag continues his collaboration with Babka Zana for his ephemeral sandwich shop, Micho. At Forest, we find the halla bread that used to be used in the snack bars. Here, this bread to fall is accompanied by hummus and pesto. On the fish side, the red tuna tartar and the sea bass carpaccio are perfectly seasoned. Flavors more than just right, on a fish of such a freshness... The markers, already, of Tortuga's cuisine.
For dessert, on Forest 's menu we find Michoco, the milk chocolate and Espelette pepper mousse previously offered at Micho, as well as a seasonal babka, still in partnership with Babka Zana. After the matcha, the recipe of the moment is arak.
To toast, Forest also proposes very original cocktails , around three elements - water, fire and rye - like the Panacea to share in a fountain covered with ivy and garnished with a big ice cube, with the effigy of Forest and composed of fennel, apple and Ginger Beer.
The cocktail well named WATER contains many elements (vodka, zaatar, yellow lemon, white balsamic, cherry tomato water), but no spring water! As for the Venenum, with mezcal, grapefruit, lime, eucalyptus and soda, it won all our favors.
Forest, a new restaurant that is particularly worth a visit, despite its somewhat high prices.
