L'Esprit Nouveau is the name of the bright new restaurant under the glass roof of the first Canopy Hotel in Paris - a Hiton Group brand. Directed by Robin Kubarek, L'Esprit Nouveau offers classic French cuisine, revisited by the chef and prepared with local, sustainably grown products.

As the lifestylehotel Canopy - the brand's first in France, and in Paris - opened its doors on May 11, it unveils its restaurant called L'Esprit Nouveau. Chef Robin Kubarek is at the helm of the kitchen.

Throughout the summer, we were able to get a taste of the chef's cuisine, with the menu offered on the rooftop of the hotel, and with his click & collect offer. From now on, we can fully enjoy it, with a menu of its own at L'Esprit Nouveau.

L'Esprit Nouveau is the spirit that Robin Kubarek wants to instill in his cuisine: classic French dishes, made with local and seasonal products, from sustainable and responsible agriculture. But above all, recipes revisited with the chef's personal touch.

Thus, he first imagined a few snacks, such as a sea flatbread or the beef crispy way.

For bigger appetites, he proposes, as a starter, a bell pepper and olive tian as well as a burnt leek and mussel cromesquis. The leek and the mussels that garnish it go very well together. The whole is refreshed by the presence of some fresh herbs.

Then, for the dishes, Robin Kubarek suggests to continue with a duck breast and smoked eel, accompanied by sand carrots with tonka bean. The duck, served with a delicious red wine sauce, is stuffed with the fish. Arctic char is also on the menu.

Finally, for the sweet touch in dessert, he worked in particular the plum with fennel and almond, and the sweet potato with pear and chocolate.

A meal that starts of course with appetizers, in this case Jerusalem artichoke chips, served with a homemade ketchup of carrot and another of bell pepper. Street food in a (very) high-class version.

The bread is signed by the Meilleur Ouvrier de France Frédéric Lalos, a sure bet. As for the drinks, we find beers from La Brasserie Fondamentale, as well as cocktails, among others. This is the negative point of the restaurant: they are very expensive. Count at least 8 euros for a 33 centiliter bottle of beer and the same amount for a soda.

The decoration and the atmosphere of L'Esprit Nouveau are very cosy, the furniture, large armchairs and sofas give more the impression of being at home than in a restaurant.

L'Esprit Nouveau offers two formulas, at 46 and 56 euros. The menu is identical for lunch and dinner. If, for the moment, the menu offers only two choices of starters, main courses and desserts, Robin Kubarek is currently working on an expanded menu for November.
