"My strong attachment to French cuisine comes from my mother. I also grew up in Japan, on land at the same latitude as France, rich in legumes and other roots. As a result, I developed an immense respect for small-scale producers and their products, which I like to work with in their entirety, right down to the root, right to the bone. I cook with all my heart, and in that sense, you could say I'm a true enthusiast."
This is how Japanese chef Satoshi Horiuchi explains his culinary philosophy.
Passionate, he is. In his dashing thirties, he now shares his gastronomic creativity behind the stoves of Passionné's open kitchen.
The chef works with Bottes en Ville, a fervent advocate of sustainable and/or organic agriculture, Caviarly's, an expert in Iranian caviar, and Hydropousse, an innovative vertical farm in the heart of Paris.
The chef's talent is expressed through his seven-step "carte blanche" menu (dinner only), and a starter/main course or main course/dessert menu at just €47 for lunch.
But also a few "à la carte" dishes where he assumes his strong penchant for seasonal vegetables (but not only).
Our taste buds travel to the whim of his inspirations, with starters such as Grilled Octopus with potato purée, aioli sauce and spinach powder, or radishes sprinkled with African bottarga in a salicorne sauce.
Then crispy veal rice with shellfish sauce, or straw-smoked roast fillet of beef with red wine sauce.
And let's not forget the Pavlova Passionné-style or the seasonal Chocolate dessert, renewed every month.
