A staple of French cuisine, the galette bretonne, also known as the buckwheat galette or galette de sarrasin, is, as its name suggests, originally from Brittany. Unlike the crêpe de froment, made from wheat flour, the galette bretonne is made from a dough of buckwheat flour, water and salt. It is then rolled out into a thin pancake on a hot griddle, commonly known as a bilig.
