A staple of French cuisine, the galette bretonne, also known as the buckwheat galette or galette de sarrasin, is, as its name suggests, originally from Brittany. Unlike the crêpe de froment, made from wheat flour, the galette bretonne is made from a dough of buckwheat flour, water and salt. It is then rolled out into a thin pancake on a hot griddle, commonly known as a bilig.

Then it's time to get creative, as just about every imaginable ingredient can be slipped into a buckwheat pancake, whether it's ham, egg and cheese for a complete pancake; andouille de Guémené and candied onions for the more adventurous; or roasted apples and camembert for those with a sweet-and-sour taste.
