Resistance bar in Paris: new team and new cocktail list

Giving pride of place to French spirits in cocktails: so is Gautier’s ambition now that he’s chef barman at bar Résistance, nestled in the heart of Paris Marais neighborhood.

A few years ago, there was just a handful of Parisian cocktail bars. Now, they’re legion. The enthusiasm for these beverages doesn’t slow down, but to stand out and be a renown name among every bar is no piece of cake.

Some bars are less known than the major ones and yet, they deserve to be as famous. This is the case of Resistance.

Nestled in Le Marais since March 2016, the bar recently changed its team. Since September 2017, the young passionate and very friendly Gautier runs the bar.

His motto? Highlighting French spirits. The bar list has also been renewed with always the three ancient and major cocktails such as the “Thousand Times Yes” (Macchu Pisco, blackcurrant liquor, lime, Jasmine essence, Bitter Lavande, egg white) as well as the Old Fashioned creations thought up during the Old Fashioned Week like the cocktail “Le Vieux Rectangle” (Bourbon whiskey, Bénédictine, Angostura Bitters, Aztec Chocolate, Nutmeg, Absinthe).

But first and foremost, we discover new skillful beverages like the “Triki” based on three different rums, grapefruit juice, almond syrup, bitter Angostura and bitter leaf or the “Le Petit Jardin de David”: a vegan cocktail based on vodka, yellow Chartreuse, fresh carrot juice and beetroot, Aquafaba and bitter rhubarb.

Drawing its inspiration from his various travels (Australia, Thailand…) Gautier also enjoys playing the “Your cocktail” game. The idea? The barman asks about what you like and create a custom-made cocktail especially for you!

What’s next? Improving the place decoration and make it more intimist as well as hosting masterclasses to make clients to start bartending, who knows!
