This Izakaya in Paris serves French draft sake

Wakaze, sake brewer set in France opens an eponymous izakaya and sake bar in Paris. This place especially serves draft sake brewed in France along with ostumami (aka Japanese tapas).

First set in Japan and now in France, sake brewer Wakaze keeps on developing in the country with the opening of sake bar and izakaya Wakaze, in the Latin Quarter. In this bar, with exposed stones, one can enjoy draft sake.

Created in 2016 in Japan, the Wakaze brewery settled in France in 2019 with the Kura Grand Paris brewery. A factory set in Fresnes, Val-de-Marne, where non-pasteurized sake based on Camargue rice is brewed. Aiming at democratizing sake, Wakaze recently opened their sake bar in Paris.

In this Izakaya-inspired sake bar, sake is served (as well as tea and beer). On the list, namazake, namely draft sake, in a barrel, non-pasteurized (brewed in the Paris area as they would not be able to bear shipping from Japan), as well as bottled sake. Four vintages are available on draft and six bottled. Varieties changing over the course of the year, especially with temporary beverages. We tried the Ichigo sake (strawberry sake, as “Ichigo” means strawberry in Japanese), a summery recipe; as well as yuzu sake. Refreshing and rather soft recipes.

To pair the sake tasting, Wakaze izakaya proposes a range of otsumami, namely the Japanese equivalent of tapas and hors d’oeuvres. Small bites, sometimes prepared with sake, and always fermented. So, on the menu, you will get some tasty karaage chicken (marinated in soy sauce), fermented tofu, exquisite sesame and miso paste-marinated tuna, amazake-marinated vegetable maki and some indulging sake sediment mochi. Nothing is wasted at Wakaze.

This sake bar being relatively small, you must book. Another room, in the basement, is yet to open soon.
