Like last year, pastry chef Sébastien Gaudard's Epiphany Cakes are very... Parisian, based on frangipane.
From January 1, 2022, you can find in the chef's different stores (rue des Martyrs patisserie and Tuileries tearoom) the chocolate Epiphany Cake based on almond cream and intense chocolate filling flaky puff pastry.
Or you can go for the famous and timeless almond cake with a delicious almond cream with agricultural rum from Martinique and crunchy and soft puff pastry.
As for the crown, this year, the famous pastry chef is teaming up with studio Ich&Kar. Staple name in contemporary graphic design, Ich&Kar has come up with a crown adorned with cocoa, coffee beans, almonds, hazlenuts or grains of wheat... Metaphorically transformed into gems. With this beautiful and original crown, Helena Ichbiah from the Ich&Kar studio wished to shine a ight on this simple yet necessary nutrient.
For the record, Sébastien Gaudard's Epiphany Cakes have been elected Best Epiphany Cakes in 2015 and 2016. In 2019, the pastry chef's cake has been named "most royal Epiphany Cake".
