Every afternoons, ice creams and sorbets take over the terrace of the Café de la Paix. In order to create its “chill” menu perfect for afternoon breaks, the chef Laurent André did not hesitate to travel throughout France to find the best ice cream-makers. He met Maître-artisan glacier Philippe Faur. Philippe Faur trained at great houses such as Lenôtre and Bellouët before taking over the family company and creating his manufacturing workshop very close to a dairy.
