For the Holidays 2017, Senoble revisits its traditional floating island by creating two gourmet yule logs: “L’île flottante Givrée” and “La Couronne de Noël”.

Senoble doesn’t offer one, but two yule logs for the Holidays 2017.

Let’s start with “L’île flottante Givrée” (the frosted floating island).

This revisited and XXL floating island features two flavors (vanilla or raspberry) and is for six persons. The first version is made of a velvety meringue base, a smooth Bourbon vanilla ice cream and a chilled caramel heart with Guérande salt. The second version, more exotic, reveals a delicate raspberry sorbet with a Bourbon vanilla frozen heart.

On the other hand, Senoble also offers “La Couronne de Noël” (the Christmas Wreath), made of 6 floating islands.

This pastry yule log brings together all the flavors from our childhood with this Bourbon vanilla and amber caramel pairing. After dipping the spoon in the delicate velvety meringue mousse, we discover a creamy vanilla and caramel heart. Finally, the crispy biscuit reveals how subtle this delicate and gold powdered pastry is.
