New Holidays, new tasty creations by Nicolas Bernardé for Christmas 2020.
This year, the pastry chef and Meilleur Ouvrier de France unveils a yule log inspired by plants from all over the world for a delicious gustatory experience.
Called Bûche chocolat, vanille et caramel (Chocolate, vanilla and caramel yule log), Nicolas Bernardé's latest creation is based on vanilla mousse, while a very light chou pastry cake represents the rings of a log.
But careful, here the concentric rings do not show the years, but butter caramel improved with a dash of fleur de sel and Madagascan dark chocolate crémeux. The whole relies on crispy praline.
A yule log paying tribute to nature and inviting us to a genuine walk in the forest. To taste it, allow €45 for the yule log serving 6 to 8 people.
