This year, the pâtissier-baker has come up again with an inverted Epiphany cake! To do so, Benoit Castel used an uncommon flaky pastry method consisting in wrapping the dough in DPO butter instead of wrapping the butter in dough.
And the result is to be discovered with this delicious Epiphany cake 2021 unveiling some lighter, crispier and more caramelized flake. As for the frangipane, it has a nice taste of almond cream with hints of Madagascan vanilla.
But that is not all! Benoit Castel also thinks about different flavor fans, and unveils for Epiphany 2021 a hearty, moist and scrumptious Kings’ Brioche.
Originating from South of France, the Kings’ brioche is based on orange blossom and candied fruits filled with sugar, and covered in sugar beads and candied fruits.
