For these Holidays, patissier-baker Benoit Castel plays the originality card by presenting a funny and childish yule log, the Bûche Cyclope.
With its wide open eye, its long lashes and its tongue sticked out, this lovely little monster is the outcome of the collaboration between the patissier-baker and Ménilmontant artists, designers Tal Lancman and Maurizio Galante.
This bûche Cyclope is very original and is based on crunchy almond Joconde cake covered in a heart-shaped lemon and olive oil insert and lemon mousse. It is then hand-piped with ricotta cream. The final touch is brought with this eye made of marshmallow and chocolate especially created on the occasion, and a little crispy tongue made of puff pastry.
Only 150 cakes will be made for Christmas 2020, you can find it from December in the three Benoit Castel stores in Paris (72 rue Jean-Pierre Timbaud 75011 Paris / 150 rue de Ménilmontant 75020 Paris / 11 rue Sorbier 75020 Paris).
