Maison Aleph is a pastry shop we love and that offers delicious pastries mixing traditional produces from Orient (Damas rose, jasmine, halva, sumac) and contemporary French pastry know-how.
The place is managed by Myriam Sabet who unveils not one but two gourmet yule logs with original flavors.
First, there’s the Hazelnut, Chocolate, Halva yule log that will delight adults as well as children. It’s made of a rolled chocolate cake, a whipped hazelnut and halva ganache; filled with old-fashion Piedmont hazelnut praline and coated in caramelized hazelnuts and sesame seeds; the whole put on a chocolate and sesame seeds crumble base.
And then, there’s the Almond, Saffron, Orange blossom yule log, thought up after Myriam Sabet’s childhood memories. This yule log should please demanding mouths with a very interesting association of flavors. It’s made of a rolled cake filled with a smooth cream infused with orange blossom and a milk chocolate mousse. The whole is coated with a whipped Iran saffron ganache and topped on an orange marmalade base and an almond cookie.
