Holidays are just around the corner and soon, you’ll have to choose which yule log you’ll present to your family and friends during the Christmas 2018 feasts.
If you are more into high-pastry, well, Relais Desserts pastry chef’s yule logs should satisfy your taste buds and your guests’. Meilleur Ouvrier de France pastry chef and chocolatier Laurent Duchêne presents us his new Christmas 2018 creation, the La Sapinière yule log.
This tantalizing yule log with a modern and sophisticated design is made of a gluten-free chocolate cake, an organic alto el sol 65% dark chocolate. Mousse and an alto el sol chocolate cream infused with green cardamom and a caramel with lime zests and juice.
And that’s not all since Laurent Duchêne also created for the Holidays 2018 a box made of 16 chocolate spheres with the flavors of Christmas: milk and dark chocolate ganache infused with four spices; caramel-orange ganache infused with ginger; praline with speculoos cookie sprinkles and finally a milk and dark chocolate ganache with mandarin and caramel.
Chef Laurent Duchêne also revealed his epiphany cake 2018: a Speculoos and Citrus fruit cake comprised an almond cream with speculoos spices, an orange-mandarin confit and speculoos sprinkles.
