Holidays 2019 will be regressive or will simply not happen at Hôtel de Berri! And for good reason, Hotel de Berri Executive Chef Jimmy de Almeida came up with a yule log shaped like a snowman, with a lovely golden crown on the head.
To surprise and amaze your taste buds and your eyes, Jimmy de Almeida chose to highlight two raw products: macadamia nuts and Bourbon vanilla from Madagascar.
This lovely yule log 2019 is made of a soft and not too-sweet joconde cake in which macadamia nut meal replaces the traditional almond meal for a stronger taste, and a delicious and light crémeux based on white chocolate and bourbon vanilla.
Small surprise for gourmands, in the heart of this yule log lay two inserts: a milk chocolate and toasted macadamia nuts nougat, as well as some salted butter caramel for a true regressive moment.
The whole is covered in silvered white velvet and adorned with a golden crown as a nod to the hotel’s logo. A yule log that will likely sit on many tables in December!
This yule log is available from December 9, 2019 at the Schiap and Le Bizzaz bar at Hotel de Berri. Allow €15 for the individual serving of €75 for the yule log serving 6 to 8.
