It is time for Prince de Galles pastry chef Tristan Rousselot to unveil hisyule log 2020, aka "Tison" (or firebrand if you prefer)! Inspired by his childhood memories, when, in the morning, he used to find firebrands in the fireplace, Tristan Rousselot disguised his yule log as a wood log thanks to vegetable coal flocking and black sugar mousse.
Surprisingly light, the yule log unveils creamy caramel insert, and the moist fir tree honey cake contrasts with the crispy puff rice. And to really indulge yourself, the Haitian dark chocolate "Cuvée de Sourceur" by Valrhona base is to be broken with a knife and can be shared and enjoyed along with a cup of coffee.
To complete the tasting, pastry chef Tristan Rousselot offers two big chocolate slabs, a crunchy one with puff rice, the other with peanut and anise which grooves are inspired by the design of wood.
In other words, this is a very indulging yule log mixing beauty and delight but with a lot of keenness.
The "Tison" yule log is available on sale from December 21, 2020 to January 5, 2021 for €75 serving 6 to 8 people, or for one, for €16. As for the chocolate slab, it costs €22. Careful though, the yule log is available in limited edition, you shall book it 48 hours in advance.
