Throughout the year, Maison Aleph offers Parisians the chance to discover pastries created using traditional products from the Levant, such as jasmine, sumac and Damascus rose, thanks to the expertise of pastry chef Myriam Sabet.
ForEpiphanie 2024, Myriam Sabet is no exception to her rule, and has come up with four galettes des rois that you won't find anywhere else. Instead of the traditional puff pastry, the chef has opted for a phyllo pastry; and let us tell you, we love these caramelized layers, baked in clarified butter from Normandy!
There are four galettes to choose from: the brand-new almond-chocolate galette, the astonishing almond-orange blossom galette, the excellent pistachio galette from Iran, or the sesame-halva galette for connoisseurs. It's hard to choose among so many sweet treats!
The 2023 almond-chocolate creation features a melting frangipane with Valence almonds. For chocolate, nothing beats Nicolas Berger milk chocolate from Madagascar 60%. Add to this an almond paste with 70% almonds, and you're on top of the game.
Note that the galettes des rois have been available at the rue de la Verrerie boutique since December 26, in 5-person formats for 29€ to 32€, and 8-person formats for 45€.
