From May 26 to June 9, 2019, Paris will live at the same time as French Open 2019. As a great tennis lover, Pierre Hermé has come up for the Royal Monceau a unique pastry to find exclusively at the palace and in Pierre Hermé stores.
“I often attended the final of this legendary tournament. The latter opposed Nadal and Federer many times and Nadal always won it, as if Federer was cursed. It marked me as well as the spectators who hoped that the wheel of fortunes could turn! The little yellow ball inspired a sour and sweet creation as striking as a smash”, Pierre Hermé explains.
The pastry chef has created the Lemon Smash tart, a pastry with a flavor and sourness as powerful as a tennis smash! The tart is made of crispy sweet shortcrust pastry, smooth lemon cream, lemon jelly, candied lemons and lemon-flavored whipped cream. the famous Roland-Garros clay is made of a fine layer of yuzu chocolate.
A dessert full of pep’s and a lovely nod to Roland-Garros to be enjoyed from Saturday May 25 to Sunday June 9, 2019 only!
