Epiphany Cake 2020 by Nina Métayer for The French Bastards

For Epiphany 2020, The French Bastards teamed up with Nina Métayer to create a tasty Epiphany cake in tribute to Notre-Dame de Paris.

For their very first Epiphany Cake, bakery The French Bastards – open in 2019 – gets a distinguished guest: female pastry chef Nina Métayer.

This cake, Nina Métayer has thought about it like a tribute to Notre-Dame de Paris. You only have to glance at it to get it: the biscuit on top has been made based on a 3D shot of one of Notre-Dame stained-glass rose windows.

As for the recipe, the pastry chef stuck to a rather traditional cake. But with a nice twist, the crème pâtissière is twisted with cinnamon and the almond cream is made with whole, chopped and toasted almonds. Each bite is full of delicious chunks of almonds and it’s delightful!
