Pastry chef Bryan Esposito has thought about all lovers in Paris! For Valentine’s Day 2020, he unveils a gourmet an exclusive dessert to share called “Lettre d’Amour” at Le Collectionneur restaurant at Hôtel du Collectionneur.
Because, is there anything more meaningful than love words to celebrate love? This pastry is a letter to write as a couple to close your festive romantic meal.
Made to order, this pastry is based on hibiscus infusion, spicy passion fruit confit, gianduja and rose petal muesli and Muxu cake, Basque macaron meaning “kiss”. In the heart of this cushion, we have carcade jelly known for its aphrodisiac properties.
Very light and sophisticated, this entremets to share presents a wonderful balance between freshness and greed. The hibiscus mousse is as light as a cloud, the sourness of the passion confit spiced up with a dash of Espelette pepper is counterbalanced by the softness of the gianduja muesli that also brings some crunch.
