Maison Plume, so is the name of this patisserie-coffee shop set by the République area in Paris, designed by gluten-intolerant and gourmand Tara Pidoux who has relatives that are diabetics. She got the idea to propose a new gluten-free patisserie, as well as delicacies that are sugar-free and with a low glycemic index.
To do so, she creates her own flour mix based on lupin flour, whole rice flour and almond meal. Each pastry and delicacy are tested on a panel to see if glycemia rises reasonably or not. Ingredients are mostly chosen because they are organic and fair.
To give a sweet taste, Tara chose to use thoroughly selected stevia, for its lack of taste. No coconut sugar or agave sugar, Tara went for the complete refined sugar-free package.
You will also find vegan offers that are egg-free, milk-free, lactose-free. Pomme amandine (apple and almond cake) or chocolate cake are some of the cakes expecting you. As for drinks, plant-based milks, such as oat milk or almond milk can be used to make your lattes if you want to.
Anyway, in terms of taste, we love it. Whether you are following a gluten-free and sugar-free diet or not, it is a must. Between the perfectly sour lemon pie, the tasty vanilla-pecan feather, or the creamy chocolate feather, there is no flaw and it is perfect.
At Maison Plume, the menu changes regularly, depending on seasons and discoveries. Coming soon: a hazelnut choux bun and an Amandine pomme-gingembre (apple-ginger almond cake) will be available.
Go and have a seat daily – excluding Mondays – from 11 a.m. (11:30 a.m. on Tuesdays and 10 a.m. on Saturdays) until 7:30 p.m. Lovely seats and cozy sofas, as well as a charming vintage terrace shape the décor. We love the bargain-hunted tableware and the welcoming vibe of the place.
