By the Hôtel du Louvre, for the Holidays 2021, the hotel pastry chef, Julien Delhome, unveils a wintery and scrumptious yule log reviving traditions.
Yes, this year, and like last year, the pastry chef has decided to revive the codes of the genuine yule log, as much as how it looks as how it tastes. Based on seed shortbread with an insert made of roasted pear, Dulcey mousse, and tarragon pear confit, the yule log is inspired by seasonal fruits. And for sure, it will bring a lot of freshness to the end of your Christmas meal.
Fall and winter fruit, pear has inspired Julien Delhome and is the Doyenné du Comice also known as Comice. A very juicy and flavorful kind of pear.
Therefore, the beige color and the seed collection at both ends of the dessert remind us of a log.
Note that Julien Delhome’s yule log is available from December 20 to 26, 2021 only, to order 72 hours before. You will have to allow €70for the yule log serving 6 to 8 people.
