If you still had doubt as for the gustatory qualities of light pastries without added sugar and with controlled glycemic index, you are about to change your mind after testing Oh Oui! pastries.
At Oh Oui!, pastries have 30% less sugar than classic pastries, without sweetener and for each of them, a low glycemic index assessed by in vitro tests performed in a validated laboratory, the Institut Pasteur in Lille. Careful though, flavors are unspoiled because this new pastry uses little-refined sugars that naturally have a low glycemic index such as coconut sugar, grape sugar or agave syrup.
As for the rest of ingredients, Oh Oui! only uses French whole wheat flours and legume flours, as well as eggs from hens raised in the open air, as colorants and flavors are natural. Recipes are taken up a notch in terms of fibers with oat bran, whole wheat flours, chicory fibers, and of course without palm oil nor conservatives. As for figures, the glycemic index of a classic pastry is over 70, but Oh Oui! pastries present indexes between 25 and 40.

Like us, go for the Finger Citron (€6; GI 31.2) with coconut sugar, almond meal, semi-whole wheat flour and chickpea crust with oat bran and eggs from hens raised in the open air, Sicilian lemon crémeux and eggs from hens raised in the open air, lemon jelly and fresh lime zests. Deliciously creamy and fresh!
Or have the Allumette Truffée (€6) based on semi-whole wheat flour, almond meal, and chicory fiber crumble, creamy 70% dark chocolate ganache, light 70% dark chocolate mousse, chocolate velvet coating. 100% chocolatey, 100% indulging and an GI of 27.8 only!
