Looking for new pastry flavors? Look no more! A new pastry store revisiting the greatest French pastry classics with Mediterranean and Middle Eastern flavors recently opened in Paris 6th arrondissement.
Called Tipana, this new pastry store has been created by Dima Al Husseini and is part of this fusion trend between timeless French pastry tradition, and sunny flavors coming from Maghreb and the Middle East, such as fig, date, pistachio, orange blossom. “I think the French pastry combines demanding technique and ultimate refinement. Tipana idea is to carry this French tradition on, by adding a hint of Mediterranean flavors”, the founder explains.
Available at this new patisserie in Saint-Germain-des-Prés, individual cakes, and cakes to share, with a twist from Maghreb and the Middle East, such as the Tarte Blida, a lemon pie with clementine zests and rose water flavored meringue; the Éclair Méditerranée mixing pistachio and ates; and even the Pâtisserie El Oued inspired by the charlotte cake but with dates.
But here, the flagship pastry is Tipana, an almond cake filled with cream muslin for one or serving more. Based on almonds, gluten-free, the dacquoise cake plays with colors and flavors: praline-hazelnut, cocoa, coffee, lemon, pistachio, orange blossom, or raspberry-rose water.
Moreover, Tipana is an invitation to good food at any time of the day: in the morning with granola, baghrirs served with honey, slivered almonds, and fresh cream; or the Algerian version of pancakes; and for lunch with flavorful and travel-inducing salads, eggs to taste, and of course, the staple Oriental shakshuka.
Last but not least, Tipana provides you with a selection of tasty teas flavored with date, peppermint, rose, or orange blossom; as well as chocolates, nougats, caramels, and other shortbreads to take away.
