You might have seen these chouquettes over the past days… Philippe Conticini causes a sensation with his chouquettes he provides at the Gâteaux d’Emotion pastry store set rue Notre Dame de Nazareth. His partner, Laetitia Di Leta is at the helm. She gladly helps gourmands visiting the store and the 50 orders. On some Saturdays, she even has to deal with up to 80 orders, showing how enjoyed cream puffs are. “Starting 2 p.m., it is no longer worth coming!”, she says, “you better order online”.
Cream puffs are made to order and filled with crèmes pâtissières and seasonal inserts: vanilla, whipped cream, coffee, chocolate, lemon, and citrus fruits for cream; citrus fruits, lemon, praline, caramel, speculoos for inserts to spruce the buns up. Laetitia recommends the following pairing: citrus fruit-praline, coffee-speculoos, and vanilla-whipped cream, so good!
Philippe Conticini recommends “standard” chouquettes, without adding whipped cream, despite the Instagram trend. He accepts the seasonal flavors created by Laetitia, so much the quality is here. Known for his cream puffs and Paris-Brest, he has just released a babamisu, namely rum baba based on coffee, as light as a cloud, and a CBD-based dessert. The success of his chouquette bar is such the chef thinks about opening a minute-made mille-feuille bar in his store in Paris 15th arrondissement.
