Pastry chef Olivier Stehly launches a new all-you-can-eat brunch, both delicious and indulging, to discover at his Fabrique à Toga in Bercy Village. Viennoiseries, eggs cooked to order, risotto, elbow pastas with truffles, lasagna, quiches, and homemade pastries, the chef delights us with an ideal idea for less than 35 euros! Word of mouth works so well, it is complete on Sundays, and the chef even considers serving his brunch on Saturdays as well. Let us tell you more about it.

After trying his luck in the Châtelet-les-Halles area, it seems Olivier Stehly has found his place in the Cour Saint-Emilion. His Fabrique à Toga – bright and well-set – is charming and promises indulging meal. Open right in the middle of the health crisis, back in March 2021, it managed to find foodies thanks to the Sugar Hero’s pastries and his indulging and comforting dishes. At the opening, we enjoyed Olivier Stehly’s elbow pastas with truffles, the sausage-mashes potato dish, and we heard he was to serve an indulging brunch! Here we are, July 2021.

On Sundays, from 11 a.m. to 3 p.m., delicious dishes cover the large counter of the kitchen. A viennoiseries station, a cheese corner (which could be improved), a pastry station, and a salad and indulging dish area. That day, lasagna, elbow pastas with truffle, grilled cheeses, bagels, so each member of the family can have something to eat. And the must, eggs cooked to order such as omelet, scrambled eggs, soft-boiled egg to enjoy with vegetables, salmon and/or cold cuts.

To delight eyes, let us lay a big table. The chef is amused and follows us. The meal will be shared with service spoons and a plate each. It enables us to taste everything without having to come and go dozens of times. We fell in love with the risotto, as creamy as can be, and the scrambled eggs, very foamy. Of course, we finished the brunch with desserts, that made the chef’s success, served in mini sizes.

The biggest asset of the brunch is the price, less than 35 euros. As a result, the 35-people room is full on Sundays with groups of friends booking a table for 8, families coming without problem and brave one trying the terrace.

PS: we have not told you earlier but there is a pinball machine to play games from our childhood.
And to be honest, brunch can go endless!
