If some people have decided to be inspired by the Holidays and winter to create their yule logs, others are more into originality and boldness.
It’s the case for Park Hyatt Paris-Vendôme pastry chef Jimmy Mornet who bet on sudashi – a small green and wild citrus fruit from Japan – for his yule log 2019.
Packed with calcium and vitamin C, sudashi remains a confidential fruit and rarely used outside Japan. Intensely sour, it’s paired with a seasonal fruit famous for its sweetness: pear, presented as a confit. Perfect to counterbalance the flavors!
As for ingredients, this yule log 2019 is special as it is gluten-free.
It’s based on sudashi mousse, pear and lemon confit, soft yellow lemon cake, pear syrup and crispy almond mix and dulce chocolate. A spicy speculoos and gingerbread cream, decorated with star anis elevate this lovely yule log.
Undoubtedly, this yule log 2019 will delights foodies’ eyes and taste buds for these Holidays!
