If some people have decided to be inspired by the Holidays and winter to create their yule logs, others are more into originality and boldness.
It is the case for Park Hyatt Paris-Vendôme pastry chef Jimmy Mornet who bet on exotic flavors for his beautiful 2020 yule log called Pétales d'Hiver.
On the occasion, the pastry chef mixes the exotic flavors of pineapple with sour hints of lemongrass and the delicacy of white tea. As for ingredients, this 2020 yule log is gluten-free.
It is based on fresh pineapple brunoise, lemongrass-infused mousse, and white tea crémeux based on coconut flower sugar cake. To top it all, the log is covered in lemongrass flower petals made of white chocolate.
We have no doubt this yule log 2020 will delight the taste buds and eyes of gourmands for these Holidays! It is available from December 17, 2020 at Park Hyatt Paris-Vendôme. Do not forget to call and book it, there will be only 30 logs available!
