Do you like original Yule logs? You're in for a treat this year with Hugo & Victor's creations. For the festive season of 2023, Hugo & Victor has teamed up with the jewelry house Bäumer to create an exceptional log, the Vendôme log.
For this original creation, available for reservation from December 1, chef Hugues Pouget and jeweller Lorenz Bäumer have imagined a log that pays homage to the Vendôme column in the square of the same name, where the Bäumer boutique is located.
It features an orange financial cookie, a 40% milk chocolate cream infused with Earl Grey tea, an orange confit and cream, an Earl Grey tea mousse, and a mendicant-style flocking and decoration of the Vendôme column in chocolate. The Vendôme log costs €149 for 6-8 people.
As usual, in addition to this signature log, Maison Hugo & Victor unveils other Christmas logs that are just as original, but accessible to more pocketbooks:
La bûche Chocolat - Chocolate crumble, flourless chocolate cookie, Piedmont hazelnut praline, milk chocolate cream, Madagascar dark chocolate supreme, Venezuelan dark chocolate mousse.
La bûche Marron-Clémentine - chestnut crumble cookie, clementine marmalade, chestnut cream, clementine confit, chestnut bavaroise, chestnut cream glaze, decor of candied clementines and marrons glacés
The Lemon-Vervain log, our favorite! - Lemon pain de Gênes cookie, lemon-verbena cream, yellow lemon marmalade, lemon-verbena confit and mousse, yellow lemon chantilly, candied lemon zest and lemon decoration.
La bûche Exotique - Coconut dacquoise, pineapple compote, passion fruit cream, coconut mousse, coconut ganache, white chocolate glaze, candied pineapple and lime zest decoration .
And let's not forget this year's signature chocolates, inspired by the codes and shapes of some of Bäumer's jewels: hazelnut-vanilla praline, Cortrat fresh mint ganache, Cortrat fresh verbena ganache, French whisky ganache, Earl Grey tea ganache, almond-tonka bean praline (25€ for a boxed set).
