A galette des rois recipe inspired by frangipane and lemon tart. The acidity of the lemon cream blends with the sweetness of the almond cream and the crispness of the pure butter puff pastry.

• The frangipane galette

The frangipane galette with almond cream is making a comeback, with pure Poitou butter puff pastry for a moment of pure pleasure.
