Choice, originality and good taste, here’s what Christophe Michalak concocted us to treat us these Holidays 2018. Our half super-hero, half pastry chic-adventurer pastry chef offers us, this year, nothing but to fly to the stars. So, of course, we run there.
Years go by and Christophe Michalak extends his range of creations. This year, not fewer than 4 yule logs are planned for Christmas. 3 Klassics for 6 people for the soft price of €48 and an exceptional signature yule log, the Rocket for €75.
Are you more into cream cheese/raspberry/passion fruit, yuzu/mango/lime or dark chocolate/pecan praline? We love the freshness of the raspberry skillfully enhanced by the passion fruit, the punch of the yuzu lemon that ends the meal and the dark chocolate pecan that is just addictive.
But this year, if you want to fly away, you’ll have to get on board of the Rocket. Think a yule log laying on a crispy caramelized hazelnut praline base, filled with a soft gianduja mousse, an almond biscuit, a light orange blossom punch, a Jivara milk chocolate mousse and a soft orange blossom cream. greed, crispiness and the subtle flavor of orange blossom, it’s so good.
For New Year, Christophe Michalak reached for the stars. Think an entremets based on almond biscuit, exotic bunch mixed to a hazelnut zabaglione mousse, exotic cream and jelly, the whole laying on a crispy hazelnut praline base. It’s light, fresh and gourmet, perfect to wrap us the festive dinner. Allow €60 for a 6/7-serving cake. Please note this yule log is wheat flour-free and the house only uses natural colorants from fruits and vegetables.
And of course, it’s not all. the chef also came up with rocking chocolates such as the rocket candy box (€50), mendiant pine trees (that will to survive so much they look good), from €20 to €30, Christmas tree bulbs (€10) and other boxes to give or to share.
New this year: you can wait until Christmas with the house’s first Advent Calendar for €45 available starting October 15.
