Yule logs 2019 are on their way! At Le Café de la Paix, pastry chef Sophie de Bernardi unveils a creation as pretty as her Christmas tree provided last year.
Originally coming from Alsace, the pastry chef has decided to pay tribute to the flavors of her childhood by working with wild rose. Younger, Sophie indeed used to go pick wild roses in spring, when it was blooming before her grandmother turns it into an herbal tea. A flower rather unused in today’s pastry, but Sophie de Bernardi is here to change things up a notch!
As for design, the chef offers her yule log 2019 shaped like beautiful Christmas bulbs. This creation unveils different layers with a set of superposition and flavors.
Once the first domes enjoyed, we discover a chocolate shortbread, crispy chocolate and goji berry mix as a support. As for Christmas pearls, they are made of vanilla mousse with wild rose insert, as well as genoise soaked in vanilla syrup. They are coated in fine Ruby chocolate (a chocolate naturally pink thanks to its bean).
This creation 2019 will catch many foodies’ eyes!
This yule log 2019 by pastry chef Sophie de Bernardi can be enjoyed from December 16 to 25, 2019 on site at Le Café de la Paix or to take away (order 48 hours in advance).
