Once again, pastry chef Yannn Couvreur blows our minds and fulfills our taste buds with 6 magnificent and mouthwatering yule logs especially created for the Holidays 2019.
And among our favorites, we have the signature “Chilling Christmas” yule log. As you can guess, fox is given pride of place and it’s so cute. This yule log is also available in individual size.
Under this superb cocoa design hides a crunchy cazette (toasted fresh hazelnuts) mix, chestnut and chestnut honey cake, cream, caramel and chestnut mousse with candied chestnuts chunks. Look at this runny heart, so good! Allow €90 for 6 servings.
We also love the “Bûche renards lovés merveille”. Unveiling five little chocolate foxes, this creation seduced our taste buds thanks to milk mousse, hazelnut and fleur de sel paste and crispy meringue. The whole covered with a fine chocolate shell for even more greed. One size serving 5.
Those who love crunchy and tasty yule logs will go for the “Bûche roulée café noisette”. We also loved it because of coffee, and we love coffee. Picture this, soft cake, macchiato cream, crunchy hazelnut mix, coffee caramel, it’s divine. With its beautiful shape that looks like a log with bark on, it’s a splendid trompe l’oeil.
We also have 2 other yule logs that have more traditional shapes but are just as good. On the menu then, we have the lime-shiso yule log. It’s made of lime mousse, creamy lime and shiso heart and lime and shiso agar, crunchy meringue and soft lime cake. It’s very good if you like sourness and the perfect yule log at the end of a heavy meal.
The second is named “Bûche exotique”. It’s made of coconut mousse, mango-passion-cilantro and fresh mango agar insert, tropical cream and soft roasted coconut cake. Fresh and light, it’s also the perfect choice if you love exotic flavors.
Note that this very white and rectangular yule log with intertwined foxes, the “Bûche 100% coco” is available in store only at Yann Couvreur at Galeries Lafayette Gourmet. It’s made of light coconut milk mousse, coconut cream with a dollop of Malibu, soft cake and crunchy coconut praline mix, as well as sour agar; the whole coated with a fine layer of white chocolate.
It’s available for €48, serving 5/6.
