Pierre Marcolini launches his new dessert collection entitled “Désirs”

We mostly know Pierre Marcolini for his exceptional chocolates, but let’s not forget that he is first and foremost a pastry chef, World champion 1995! With this new pastry collection, he rebounds with his first loves while keeping a foot in chocolate. We tasted the “Désirs” and you want too, they are just absolutely delicious.

You like Pierre Marcolini’s chocolates? Well, you will love his pastries! Pierre Marcolini launches his new range of pastries entitled “Désirs”, and there’s one thing we know for sure, you will desire them all after tasting them.

In Pierre Marcolini stores, especially in France, we are used to find chocolate and macarons, but pastries are not really here. But it’s okay, the wrong is repaired with this new original collection that features – so far – 11 original recipes. Some will remain on the menu while others will change according to seasons and the current fresh ingredients.

You doubt it, this collection gives chocolate pride of place. It combines love of good dessert and the chef’s know-how when it comes to chocolate.

With its cubic and colorful format, perfect realization, these pastries stick to the chef’s visual identity. A lovely marriage between design, modernity and pop colors.

I wanted to create a pastry that’s innovative, modern and inspiring at the same time… Offer a signature that is this fine chocolate shell. Each dessert is conceived as a chocolate candy. An improved chocolate candy, 60gr of pleasure. In addition to praline, ganache or caramel, I’ve added a nice cookie, a fruit compote or a light cream.

I got inspired by the culinary world to create each treat by transposing each texture making a dish. We find the crispiness of a cookie – with as little sugar as possible, combined to a light part – the lightness of a mousse, a Bavarian cream or a light cream and the compote or the insert that will bind the whole thing.

In terms of visual, I wanted to bring a true modern aspect through a unique, cubic shape full of color. To bring emotions, love of life to each creation and the estheticizing dimension proper to the Maison” Pierre Marcolini declares.

Voilà. Everything has been said by the chef! Among the recipes, we find the Désir Fruit Exotique [Exotic Fruit Desire] with a homemade white chocolate shell, sesame meringue, vanilla mousse, mango and yuzu exotic insert.

The Désir Fruits Rouges [Red Berries Desire] with a homemade white chocolate shell, a gourmet Miserable almond cookie, vanilla mousse and red berries insert (blackberries, Morello cherries, raspberries, blackcurrants).

The Désir Citron [Lemon Desire] with its homemade white chocolate, surprising hazelnut dacquoise cookie, slightly lemon-flavored cream and lemon insert.

The Désir Framboise [Raspberry Desire] with homemade dark chocolate shell, moist chocolate cookie, crispy nougatine, vanilla and milk mousse and raspberry insert.
