Mouflet, the new 100% French muffin-based “light kitchen”

Mouflet is the brand-new “light kitchen” that opened in Point Ephémère kitchen and providing – on delivery and takeaway – English muffins but revisited the quirky way, made in France style.

Point Ephémère kitchen are turned back on after months in the dark, with a brand-new concept of “light kitchen”: Mouflet. Created by Zac and David, this transparent dark kitchen gives pride of place to the traditional English muffins revisited made in France style.

Moreover, Mouflet highlights tasty, local, and seasonal ingredients, fish from sustainable fishing; and home-makes recipes from A to 2. Therefore, bread is based on French flour supplied by a family-owned mill set 80km from Paris, proved and baked on site, so is the rainbow trout, coming from the oldest fish farm in France, smoked with beech tree straight on Point Ephémère roof.

Label Rouge (Red Label) pork, from Maison Montalet, is rubbed with a secret blend of spices, then cooked at low temperature for 12 hours, before pulling. Only good things!

Moving on to recipes, Mouflet provides:

  • Mouflet jambon blanc – based on white ham, exquisite mornay aged and organic mimolette sauce, lamb’s lettuce, pickles. Once the sauce spread, the mouflet is very slightly toasted in the oven to broil it.

  • Mouflet jambon truffé – tuffled ham and truffle oil mornay sauce are perfectly pairing in this truffled staple!

  • Mouflet truite fumée – beech tree smoked trout by Chef Zac paired with seasoned lamb’s lettuce, red pickles, and cheese sauce.

  • Mouflet veggie – based on pan-fried kidney beans, it dances with fresh herb pesto and caramelized onions.

  • Mouflet porc effiloché – based on French “12-hour cooked” pork shoulder, pulled and cooked again in its own broth. The whole stuffed with fresh herb pesto, and bittersweet pickles. So pork-tastic!

As for sides, Mouflet provides foodies with crunchy-smooth potato fritters, creamy kale, coleslaw, and of course, everything is homemade. And for those who are still hungry after all these wonders, they can enjoy the apple and walnut crumble including smoked apple sauce; or the delicious sweet potato with salted butter.
