Let us start with a sure bet, chocolate, of course! Jeffrey Cagnes’s chocolate yule log is as indulging as can be. This indulging cake consists of cocoa shortbread, praline-feuilletine crunch, and chocolate cake. It is then covered in 64% Peruvian chocolate crémeux, almond and hazelnut praline, and silky 64% dark chocolate mousse. The final touch? A chocolate and cocoa nib glazing and a few hazelnuts.
Are you more into freshness and sourness? Then, the roll lemon yule log is for you. This creation is based on mango mousse, mango-passion fruit-black sesame confit, almond and black sesame crunch, a lime Madeleine cake, almond shortbread and mango glazing.
Then, let us move to our favorite yule log, the Tatin yule log with a very morish taste. Picture this: apple and caramel, shortbread, almond crunch, vanilla Madeleine cake, creamy milk caramel and caramelized apples. Without forgetting a vanilla mousse, as light as a cloud, and a caramel mirror glazing to perfect it all, so good!
Jeffrey Cagnes also comes up with the Bûche Chocolatier but travel yule log style to take everywhere. Like a chocolate slab Jeffrey Cagnes style, made with feuilletine praline and spices (cinnamon, ginger, nutmeg, and clove), orange blossom ganache and candied orange jelly, this chocolate-lover yule log is covered in a dark chocolate shell.
