Let us start with a sure bet, chocolate, of course! Jeffrey Cagnes’s chocolate yule log is as indulging as can be. Under a raw look reminding us of the exposed stones in his store, the yule log is based on two hearty layers of thick and fluffy 64% Peruvian chocolate and salt flake cake. Between the layers is spread caramel crémeux and silky chocolate ganache twisted with Tonka bean. Then, discover a runny insert made of salted caramel for softness and sweetness. The whole is encased in light Madagascan vanilla cream covered with thin and crunchy milk chocolate. Last but not least, a cocoa velvet coat for the finished touch.

Are you more into freshness and sourness? Then, the roll lemon yule log is for you. This is a yule log inspired by lemon pie and we must say that it does not lack lemon. This yule log is made of lime crémeux wrapped in almond cake. Inside hides lemon, basil and olive oil confit to soften the sourness of lemon but always very fresh. To conclude the tasting, whipped lime ganache, beautifully pipped and sprinkled with zests. Last but not least, hazelnut streusel with salt flake is put at the top to give more crunch and structure to the yule log.
