Named best pastry chef two years in a row, Nina Métayer first worked for Café Poushkine, but then opened her online store and a pastry counter at the Printemps du Goût.

For this Christmas 2021, she came up with two creative and indulging yule logs. Her inspiration? Her children, of course! And is there anything better than the famous Christmas letter box to embody the Christmas spirit?

Called the “Lettre au Père Noël”, this numbered yule log in limited edition has it all. Please note everything is made by hand and there are not two identical yule logs.

It is based on light and fresh pine tree bud mousse associated with fir tree pepper and pear confit. Add to this a few diced forest honey madeleine cakes, the whole lying on a roasted almond and Christmas spice crunchy shortbread, and there you go for a gustatory discovery!

Careful, there will be only 100 samples of this yule log available for €89 and serving 6. It also comes in individual size for €9.50, to delight curious people looking for yule logs to try.

Nina Métayer also delivers a second yule log called “Promenade en Forêt”. A vegan yule log likely to delight people looking for reasonable treats. It is based on crunchy chocolate shortbread with salt flake, light hazelnut and almond mousse, smooth chamomile crémeux, cocoa nib and dried kefir lime leaf praline, the whole delicately topping some fluffy chocolate cake. For the final touch, thin and crunchy chocolate leaves.

This yule log comes in 3 sizes: serving 4 for €34, serving 8 for €59 and for one, costing €8.5.
