Chocolate, coffee or vanilla éclair... We all love classic éclairs! But to shake our habits up, the Quinzaine des éclairs gives pride of place to the pastry we eat in just one bite and available in bakeries from March 9 to 21, 2020.
For two weeks, participating bakers gather to create 3 common delights to eat in one bite. And this year, let's enjoy floral signatures. No, you won't feel like eating flower but very tasty pastries finely flavored with rose, orgeat and violet.
This year, the main and unmissable ingredient is crème pâtissière. And we're happy because we love it.
Lovely: an oh-so girly creation mixing rose crème mousseline, filled with raspberry and lychee.
Liberty: our winner, based on almond and orgeat syrup diplomat cream, crispy pistachio and stuffed with praline.
Betsy: a nod to British delights with crispy blueberry, mango crème pâtissière and violet.
