Istr: a new oyster and cocktail bar in Paris

Istr is a new bar-restaurant moored in rue Notre-Dame de Nazareth in Paris 3rd arrondissement. On the menu: fleshy oysters, delightful cocktails, small and original dishes and natural wines – to be enjoyed at the counter or in a corner of the room papered with patterned wallpaper depicting big crabs and turnips.

What a joy to hear Istr is open, an oyster and cocktail bar inspired by New-York oyster bars, moored in the Marais neighborhood! If the oyster-cocktail combo already won its spurs in Paris – at Mary Celeste for instance – Istr hits hard with an original menu, its chic setting but without fuss, its taste for details (USB sockets to charge your phone under the bar for example) and its surprising creations.

If, like us, you’ve never had oysters before other than with a splash of lemon juice or a spoonful of shallot vinegar, you might be surprised when discovering the many variations of the menu: tempura oyster and Tzatziki sauce, or bolder the Oyster shot – a secret preparation prepared in line with the purest tradition we recommend without second thought.


Anyway, our oyster friends (from Brittany, Normandy or Ireland) are served plain or with an atypical side such as raspberry vinegar, soy and ginger sauce or more surprising, Tabasco.


For those who are not oyster fans, Istr also has, in addition to punchy appetizers, absolutely delicious tapas: pollock ceviche, salmon gravlax and cauliflower tabbouleh, lobster roll, knife-cut beef tartare and lobster oil, sausage roll from Chavassieu, and the veal tataki served with cockles and pickleweeds.


As for us, we end this sea feast with two glasses of flavorful organic white wine – a “Premier rendez-vous” and a “Chenin méchant”, more mineral.

And as any self-respecting gourmet eater, we ultimately give a go to the deconstructed lemon meringue pie – that will make many pâtissiers jealous – served with a dessert cocktails (kefir citron), surprising but very tasty.


Before you leave, don’t forget to drink a small cup of coffee (or one last shot) at the counter while chatting with the place founders, each nicer than the other. While you are at it, you better get yourself known in your new HQ!
