This year, for the Holidays, L’Hôtel du Collectionneur gives extreme cold pride of place. Executive Chef of L’Hôtel du Collectionneur, Joël Veyssière, and his pastry team naturally decided to get inspired by Russian architecture and its frosty weather.
Indeed, they wanted to reproduce the onion domes of the Russian churches by giving this shape to their yule log called “Douceur du Grand Nord”.
In terms of flavor, they associated lemon fruits with chocolate by adding a small regressive touch with gingerbread.
Orange crème brûlée biscuit, vanilla ivory mousse the whole topping crispy puffed rice! We discover different textures on each layer but when they’re eaten all together, they create a delicious and harmonious whole. We like how light it feels, of fresh the orange heart tastes like and the peps brought by spices. A nice mix making this yule log a genuine success.
