On February 14, 2018, restaurant “Ducasse au Château de Versailles” will open its doors at nighttime to an individual clientele, for a dinner in the restored salons from the 17th century on the first floor of the Pavillon Dufour featuring an exceptional view on the Royal Court. A unique experience to book without wasting your time.
The menu is the illustration of a modern French cuisine that highlights seasonality and vegetal, very appreciated by the king. Indeed, in 1678, Louis XIV ordered the creation of a kitchen garden under the management of La Quintinie. He discovered then the most varied fruits and vegetables including the asparagus he used to love a lot.
Chef Stephane Duchiron came up with a menu in tribute to the late king. Einkorn cookpot, root vegetables, black truffle, yellow poultry from the Landes in Albuféra, first green asparagus, passion fruit Vacherin…
The finest wines have been selected by restaurants DUCASSE Paris chef sommelier Gérard Margeon to highlight the flavors of each dish.
Tables are laid with tableware from the Ancienne Manufacture Royale in Limoges, faithfully reedited by the Maison Bernardaud and the glassware is inspired by the Venetian fashion of the time era and evoke yesteryear’s splendors. The careful service of the waiters and the sommelier in their ceremonial dresses help the magic of this moment happen.
